As promised, I made this recipe, and these pancakes are really delicious and did cook up fluffy (I pulled out the cast-iron skillet as you recommended). The only problem was I made just one batch so there are non left to freeze:( My 5 year old loved these, and after ingesting chocolate chips and maple syrup I shall now offer up a prayer for his teacher this morning.

Maureen,
I will definitely be trying these as soon as I do our monthly trip to the grocery store. Fall has me craving pumpkin (why is that?) I love the idea of pairing it up with chocolate chips. YUM! I also am a fan of making more than one batch and doing the ziplock baggy thing (one of the truly great inventions of our time:)) I’ll post again after I’ve made them.
